Waffles
Since T started Keto I've tried A LOT of waffle recipes and this has to be my (and T's) hands down favorite. They are so simple to make and easy to modify. I've made a Chocolate Waffle using this as a base recipes, or I've added blueberries or chocolate chips, I've even swirled in some peanut butter to make peanut butter waffles. I modified this recipe from The Hungry Elephant's waffle recipe. Her website has become one of my go to sites for inspiration when I'm trying new things for T, if you haven't stumbled upon her site yet you should check it out here.
Waffles:

The What:

14 g Coconut Flour

1.6 g Xanthan Gum

2.5 g Baking Powder

50 g Egg
-
56 g Heavy Cream
-
28 g Avocado Oil
The How To:

Turn on waffle iron

In a small bowl combine all the dry ingredients.

Add in eggs, heavy cream and oil and mix well.

Measure out desired portion and pour into waffle maker, and cook for 5 min.

Repeat until all batter is done
