T's Taco Salad

We were having dinner one day and T looked over to our plates and said "I wish I could have that, can you make me that?"  I looked down at my plate, then looked over to T, then looked at my plate SHOCKED and asked "you want this? This is SALAD, you want me to make you salad?!?!?! 

T - "Yes, can you make me salad?"; so I did, and he LIKED IT!!!!

MIND BLOWN!!!  

What I learned from this: keep introducing foods, even if they doesn't like it at first you never know when they might surprise you!  

 

Discovering that he likes salads has been a game changer for meal time, he gets larger portions and his meals look more like the rest of the family's.

T's Taco Salad:

Ratio:1.93:1    Serving Size: 1 bowl    Makes: 1 serving

prep time: 5mins ❤  cook time: 0mins  ❤  total time: 5mins

         

The What:

  • 40g Classic Coleslaw Mix

  • 15g Ground Chuck (cooked)

  • 5g Shredded Cheddar Cheese

  • 20g Hass Avocado

  • 7.5g Extra Virgin Olive Oil 

  • 3g Sour Cream

  • optional to increase ratio Heavy Cream as needed

  • optional lime zest

  • salt to taste

The How To:

  1. In a small cereal bowl or plate add coleslaw mix. Season with olive oil, lime  zest and salt to taste.  Toss to coat.

  2. Add in all the other ingredients (other than heavy cream) to the bowl and toss to combine. 

  3. Serve and Enjoy.  (T has a milkshake (30g Heavy Cream blended with water) on the side to reach his target ratio of 3.5:1 and calories 300)
