Strawberry Compote
T went through a phase that he was asking for PB&J and I just could not get the ratio right with any of the sugar free jellies that I found. And I had a few some strawberries that were just past ripe so I figured I'd give making my own a try. It ratio is on the high side so I was able to make him a PB&J! This compote is also good swirled into full fat plain yogurt to make your own keto strawberry yogurt.

The How To:

Combine all the ingredients in a small sauce pan, and heat low heat.

Simmer for 20 min stirring occasionally and mashing berries until a puree forms.

Allow the compote to fully cool prior to transferring to an airtight container and storing in fridge.
