Strawberry Compote

T went through a phase that he was asking for PB&J and I just could not get the ratio right with any of the sugar free jellies that I found.  And I had a few some strawberries that were just past ripe so I figured I'd give making my own a try.  It ratio is on the high side so I was able to make him a PB&J!  This compote is also good swirled into full fat plain yogurt to make your own keto strawberry yogurt.

Strawberry Compote:

Ratio: 4.66    Serving Size: 1 Tbsp (15g)    Makes: 14 serving

prep time: 2 mins ❤  cook time: 20 mins  ❤  total time: 22 mins

The How To:

  1. Combine all the ingredients in a small sauce pan, and heat low heat.

  2. Simmer for 20 min stirring occasionally and mashing berries until a puree forms.

  3. Allow the compote to fully cool prior to transferring to an airtight container and storing in fridge.
