Soft Pretzels
These soft pretzels are made from a modified "fat head dough". I remember when T started keto and I was looking up recipes I would see "fat head dough" EVERYWHERE. I was confused as to what it was. So if you are lost, like I was, fat head dough is a dough made from cheese, egg and a small amount of flour. To up the fat in this recipe I added some MCT oil powder and used almond flour.
T will have these pretzels as part of a meal or as a snack with cheese sauce, to increase ratio.

The What:

168g Mozzarella Cheese

30g Cream Cheese

112g Almond Flour
-
50g Egg
-
2.5g Baking Powder

14g Heavy Cream
-
50g MCT Oil Powder
The How To:

Preheat oven to 425

In a microwave safe bowl combine cream cheese and mozzarella. Microwave 1-2 minutes until melted -mix to combine and set aside

In a medium bowl combine almond flour, baking powder, MCT Oil Powder (1/2 tsp onion/garlic powder optional)

Add dry mix, 45 g of egg and 10 g heavy cream to to cheese mixture. mix with silicone spatula (or hands) until a stiff dough ball forms.

Separate into 25 g pieces and roll out into thin ropes, then twist into pretzels.

Place on a parchment lined baking sheet.

Combine the remaining heavy cream and egg in a small bowl. Brush this mix over pretzels.

Optional: sprinkle with salt flakes
