Pumpkin Spiced Donuts
Who doesn't like pumpkin spiced everything?!?!?! In Miami it doesn't get very cold and we don't have much of a Fall, but on those 2-3 days of the year that it does feel like Fall we like to do it big!! We bust out our fuzzy boots, jackets and want to eat all the pumpkin spice things that we can get our hands on!! LOL
So, that one day in November when it was 60 degrees I made these Pumpkin Spiced "Sugar" Donuts for T. And they were a hit!!! I think his favorite part is that they are tossed in sweetener so every bite has some sweetness, and then he can lick off any stuck to his fingers when hes done. The addition of flax meal to these donuts, can really help with constipation that is so common for keto kids.
Pumpkin Spiced Donuts

The What:

28g Coconut Flour
-
15g Baking Powder
-
3.2g Xanthan Gum

10g Flax meal
-
2.2g Pumpkin Spice

100g Egg
-
115g Heavy Cream
-
56g Avocado Oil
-
6g Sweetener
The How To:

Pre-heat oven to 350.

In a medium bowl, combine all the dry ingredients other than the sweetener.

In a large bowl, combine the eggs, heavy cream, and avocado oil and mix until well combined.

Add the dry ingredients to the wet and mix with a silicone spatula until well combined.

Measure out 40 g of dough and pour into donut molds, repeat until all the dough is used up.

Bake for 20-25 min, remove from oven allow to fully cool in molds.

Remove donuts from molds and toss donuts in sweetener.

Enjoy, or store in an airtight container in the fridge.
