Mini Pancakes
There's been this mini pancake cereal trend popping up on IG and TikTok ( i only know this bc of my tween LOL) since quarantine, and I'm a little late to the party but I'm so glad that I came!
These mini pancakes are delicious, pretty easy to make and can be served in different ways, giving your keto kid some variety in their meals without giving you too much extra work. I whipped up a batch and have served them as cereal as shown above, with berries and whipped heavy cream for dipping, and topped with syrup and butter.

Mini Pancakes:

The What:

56 g Almond Flour

50 g Egg
-
20 g Choczero Maple Syrup

14 g Avocado Oil
-
28 g Heavy Cream
-
2 g Vanilla Extract

14 g Ghee
The How To:

In a bowl combine all the ingredients other than the ghee, and mix until well combined

Pour the batter into a squeeze bottle.

Heat a frying pan on medium low heat and add the ghee to it.

Once the ghee is melted make the little pancake shapes with the squeeze bottle (if the batter is too thick at 1/2 teaspoon of water to thin it out) on to the hot skillet.

Cook until batter starts to bubble and flip, cook for another minute or 2.

Serve as is or topped with butter and syrup, or with "milk" for mini pancake cereal.
