Iced "Sugar" Cookies
These iced sugar cookies never disappoint! They look so fancy and taste so good that you're sure to impress not only your keto kiddo but everyone who tries them. They'll never know how easy they are to make!! The trick is to cut out the cookie shapes after they bake.
I make them for every holiday in different shapes, Christmas Trees, Hearts, Shamrocks, Stars .... the options are endless. You just need the right cookie cutter and some melted ChocZero baking chips.

The What:

100g Eggs

80g Coconut Oil
-
70g Butter
-
30g Coconut Flour
-
55g Almond Flour
-
food coloring - optional
The How To:

Preheat oven to 350

Cream the butter and coconut oil until light and fluffy

Add the egg, combine well

In a separate bowl combine all the dry ingredients

Combine the wet and dry mix well, set aside for 5 min to allow the coconut flour to absorb some of the liquid

Place on parchment lined cookie sheet and top with another sheet of parchment paper, roll out the dough to desired thickness. (about 1/4 inch)

Remove top sheet of parchment paper and bake for 10 min or until edges are slightly browned

Remove from oven and allow the cookie to continue baking on hot sheet for another 5 min

Using a cookie cutter cut out desired shapes or just cut into squares.

Place the cut cookies back onto a parchment lined cookie sheet and return to the oven for 3-5min to allow the edges to brown slightly & the cookie to firm up.

Melt the chocolate chips in the microwave in 10 sec intervals until fully melted (mixing in food coloring if desired) to use as cookie icing

tips for icing cookies:

use a ziplock bag as a pastry bag: pour melted chocolate into a ziplock bag and make a small cut in one of the corners,

outline the shape of the cookie first then fill in the rest of the cookie

less is more, the icing will spread

allow the cookies to fully cool before icing.
