Dark Chocolate PB&J Minis
These are a copy cat version of the Trader Joe's Dark Chocolate PB & J Minis. We saw them at the store the other day and I thought, "I can do this!" They came out so yummy! Thanks to the amazing keto friendly ingredients.
I used Choczero (duh) dark chocolate chips, Fatso Coco peaut butter, and my homemade strawberry compote. They were surprisingly easy to make, you just need to have the right tools, like these silicone mini cupcake molds. I think I might try an Easter Egg version of these for Easter. I'll keep you all posted on how the come out!
At 4.1 ratio they're a great way to add a little fat boosted treat to a meal or snack.

Dark Chocolate PB&J Minis:

The What:

10.5 g Coconut Oil

20 g Strawberry Compote

20 g Fatso Cocoa
The How To:

In a small microwave safe bowl combine 1/2 (56 g) chocolate chips and 1/2 (5.5g) coconut oil and melt in 30 sec intervals stirring until melted completely

Fill the bottom of a silicone cupcake mold about 1/4 full with melted chocolate, then place molds in freezer about 10-15 or until set.

Add about 1/4 tsp of peanut butter to each mold and place in freezer again until set.

Top with 1/4 tsp of strawberry compote and place in freezer again to set.

Melt the remainder of the chocolate and coconut oil.

Top the PB&J minis with remaining chocolate and place in freezer one more time to set.

Serve and Enjoy , or store in an airtight container in the fridge or freezer until ready to eat.
