Croquetas de Jamon

My husband and I are first generation Cuban Americans.  Our heritage and culture are important to us and we try to raise our kids so that they are aware and proud of where they come from. 

 

As silly as it sounds food is a HUGE part of this.  Most typical traditional Cuban dishes are NOT keto friendly. Every time I can "ketofy" one of these dishes and share them with T I feel like I'm able to share with him a little more the wonderful craziness that it is to be Cuban American. 

Croquetas de Jamon (Ham Croquet) are a ground ham mixture breaded and then deep fried.  I know it might sound off putting but trust me they are delicious and you will find them at all Cuban celebrations from simple family breakfasts, to birthday parties and even weddings!  These were easier than I thought they would be to make and a huge hit with the whole family.

Croquetas de Jamon:

Ratio: 2.63:1    Serving Size: 3-4 croquetas (64g)    Makes: 4 servings

prep time: 10 mins ❤  cook time: 5 mins ❤  total time: 15 mins

         

The What:

  • 123 g Smoked Ham (canned)

  • 29.6 g Heavy Cream

  • 25 g Egg (1/2 an egg mixed well)

  • 1.6 g Xanthan Gum

  • 8.26 g MCT Oil Powder

  • 27 g Almond Flour (more will be needed to bread the croquetas but that is what sticks to them for calculation of ratio purposes

  • 35 g Coconut Oil (more will be needed for frying but 35 is what is absorbed to croquetas while frying for calculation of ratio purposes)

The How To:

  1. Combine the ham, heavy cream, egg, xanthan gum and MCT powder in a food processor and blend until a smooth mixture is created. 

  2. Scoop out about 16 g of mix and form into croqueta shape using oiled hands.

  3. Dredge croquetas in almond flour

  4. Repeat steps 2-3 until all the ham mixture is used up.

  5. Heat coconut oil in a frying pan or fryer and fry croquetas until golden brown.

  6. Store in an airtight container or freeze and reheat as needed.

  7. Serve with cilantro mayo or Cafe con Leche
