Creamy Pesto Linguine and Soppressatta

One of my kids' favorite things is pesto pasta.  Luckily for me its easy to make, especially when you find a delicious keto friendly one like the one I found at Trader Joe's!  

These Palmini Linguine noodles are my favorite pasta substitute. 

The texture is great, the assume the flavor of whatever sauce you put them in and they don't appear intact on the other end. 

(if you've tired a few other the other keto noodles, you know what i'm talking about!! 💩💩)

Creamy Pesto Linguine & Soppressata:

The What:

The How To:

  1. Rinse and drain the pasta, measure out the desired portion and set aside

  2. In a small sauce pan on low heat, combine the cream cheese and heavy cream stirring until melted and well combined.  Simmer on low heat 2-5 minutes to allow the sauce to thicken.

  3. Add in the pesto, stir to combine.  

  4. Toss in the pasta, coat well.

  5. Chop up the soppressata and mix in with pasta, or roll up and serve on the side.

  6. Serve and Enjoy .
