Blackberry & Strawberry Cream Cheese Cookies
Not my prettiest picture, but I promise these cookies are yummy!!! (at least T thinks they are)
These cookies are soft and chewy, getting most of their sweetness from the strawberry and blackberry filling. They are a nice addition to a meal or make a great snack with some "milk". I hadn't made these for a long time and I'm so happy that someone requested I add them to the website because I had forgotten how much T enjoys them!
They bake quickly so keep a close eye on them!
Cream Cheese Cookies:

The What:

168g Almond Flour

75g Butter
-
56g Cream Cheese
The How To:

Pre-heat oven to 350

In a medium bowl combine butter, cream cheese, vanilla MCT and sweetener, using an electric mixer, until smooth

Fold in almond flour, using a silicone spatula

Chill dough for 30min

Measure out 14-15 g of the dough, roll into a ball and place on parchment lined cookie sheet. Repeat until all the dough is used.

Using your thumb make a dent in the center of the cookie, fill the dent with 1/2 tsp (approx. 8 g) blackberry jelly or strawberry compote.

Bake for 8-10 min or until edges just start to brown.

Allow to fully cool before taking off baking sheet, to allow them to finish baking and harden up enough to handle

Enjoy or store in an airtight container in the fridge.
