Copycat Club Crackers

Cheese and crackers has always been a go to snack in our house.  Our favorite snack crackers were the Keebler's Club Crackers.  They're buttery and flakey but still hold up well when stacked with ham and cheese and popped in the microwave to make a gooey, cheesy, but still crunchy oh so satisfying snack. Yum!! I could totally go for that snack right now!   

Obviously, club crackers are off limits on T's diet, that is until now.  I don't want to brag but these came out so so good.  They check of all the boxes and are as close to the real thing as you can get without the added carbs.

Copycat Keebler's Club Crackers

Ratio: 2.87:1    Serving Size: about 6 crackers (30g)    Makes: 10 serving

The What:

The How To:

  1. Preheat the oven to 375

  2. In a bowl combine almond flour, salt, and xanthan gum, whisk until well combined

  3. Add melted ghee and egg and mix until well combined

  4. Place cracker dough on a silicone mat or between 2 sheets of parchment paper and roll out until 1/3 inch thick

  5. Using a pizza cutter cut dough into rectangles and pierce each cracker 6 x with a fork to get the desired pattern and to vent the dough. (This prevents an air bubble from forming under the dough as it cooks)

  6. Bake for 10 min or until the edges just start to brown.

  7. Allow to fully cool on the baking sheet prior to removing and separating into individual crackers
