Choco Squares
We have 3 kids and in our house we try to avoid having high carb and high sugar foods for a number of reasons but mainly because its easier to keep T on track without so much temptation always in his face. That being said you will still find the occasional carton of ice cream, bag of chips, or box of Cocopuffs, because life and I don't really restrict what my other kids eat, that's just what works for us.
The other day my oldest was eating Cocopuffs and T watched in amazement as the cereal turned the milk into CHOCOLATE MILK! 😋🤣 He turns to me and says "Mami, can you make me that!?!? I know you can make anything!!"
HOW COULD I SAY NO?????
He's the only one I have left that still believes I know everything and can do anything. Must hold on to this as long as I can!!!!!! It took a couple tries but finally Coco-Squares was created!!!

Choco Squares:

The What:

70 g Almond Flour
-
10 g Psyllium Husks

3.2 g Xanthan Gum

5 g Baking Powder
-
2 g Cacao Powder
-
20 g Chocolate MCT Powder

50 g Egg
-
15 g Water
-
78 g Butter (melted)

10 g Coconut Oil
The How To:

In a mixing bowl, whisk together the dry ingredients, other than the sweetener, and the chocolate chips

Crack in the egg and pour in the butter and water.

Stir thoroughly, then use your hands or a silicone spatula to form it into a dough ball

Roll the dough flat between two sheets of parchment paper to about an 1/8in thick.

Cut horizontal and vertical lines to create several small squares, (about the size of your thumb nail.

Place the dough into the oven and bake at 350°F 10 minutes or until nice and browned on the top, and set aside to cool.

Once cool, they will firm up and you can break them apart where you cut the lines.

Once cut up place in the air fryer at 400 for 2-3 min to crisp all around edges.

Combine the chocolate chips and coconut oil and melt.

Toss the cereal in the melted chocolate until well coated, sprinkle with sweetner and layout on a sheet of parchment paper to dry out.

Serve and enjoy! (T has it with heavy cream vs milk to reach his ratio)

Or store in an airtight container until ready to eat.
