"Cheez-It" Stars
This is one of the first snacks I made for T when he started keto. Let me rephrase, this is one of the first snacks I made for T that he actually LIKED.
I make these at least once or twice a month, doubling the recipe. I store them in portioned out ziplock bags ready to go when we need/want them.
It is modified from The Keto Cookbook. This book is awesome, its a keto cookbook specific for kids on a medical keto diet, all the recipes are in grams and at 4:1 ratio. It was written by a keto mom and a nutritionist, and its full of other great information on how to navigate medical keto successfully. If you don't have it I strongly recommend it.

The What:

20g Egg Whites
-
90g Roasted Salted Macadamia Nuts

30g Shredded Cheddar Cheese (i use Kraft)
The How To:

Preheat oven to 375

Measure out all the ingredients

Grind macadamia nuts in food processor

Add egg whites and shredded cheese and combine until a stiff dough is formed

Place the dough bewteen 2 sheets of parchment paper and roll out dough to desired thickness (about 1/4-1/8in) The dough shouldn't be translucent.

THE TRICKY FANCY METHOD: Using a cookie cutter cut out desired shapes, then transfer to a parchment line baking sheet ... or ...

EASY METHOD using a pizza cutter cut dough lengthwise and across to form squares, slide a baking sheet under the parchment paper with the cut dough.

bake for 7- 10min or until edges start to brown. Keep a close eye on them they bake quickly

allow to cool, measure out servings and store in ziplock bags.
