Blackberry Jelly

I went to the grocery store one day and there was an amazing sale on blackberries, and since blackberries are such a keto friendly fruit, I may have gone overboard and bought way more than T could eat before they started going bad.  In an effort to save the berries, this and a few other blackberry recipes were created.

My blackberry cream cheese cookies use this jelly, and we've also mixed it into yogurt, and topped keto graham crackers (like pictured above) with it.  Its a not too sweet perfect topping that T really enjoys. 

Blackberry Jelly:

Ratio: .61:1    Serving Size: 1 Tbsp (15g)    Makes: 7 serving

The How To:

  1. In a small sauce pan on medium heat combine all the ingredients and heat until boiling, stirring often.

  2. Lower heat, and simmer for 15 min stirring and smashing berries occasionally.

  3. When the sauce begins to thicken and appear jelly-like remove from heat.

  4. Allow jelly to fully cool prior to storing in an airtight container (small mason jars work great)
