Banana Pancakes
Made with REAL LIFE BANANAS!!!!!
T had been on strict keto for about 18 months before I discovered this recipe. It was shared on the Face Book group "Daisy Garland - Keto Cafe"
(I've mentioned this group before and I strongly recommend that you join them if you haven't so already. Its a great resource for support and recipes!!!)
But like I was saying T had been on keto for 18ish months and had not had a banana since starting the diet. His reaction when we tried them was PRICELESS. He told me "Wow, it tastes like REAL LIFE BANANAS!!!!"

Banana Pancakes:
Ratio: 3.55:1 Serving Size: 2 pancakes Makes: 1 serving
prep time: 5 mins ❤ cook time: 5 mins ❤ total time: 10 mins
The What:

12 g Banana
-
50 g Egg
-
23 g Vanilla Bean Ghee
-
16g Heavy Cream
The How To:

In a small bowl mash the banana until well mashed.

Add in eggs, and whisk until well combined.

Add melted ghee and 1/2 the heavy cream whisk again.

Heat a small frying pan on medium high head, and pour mix 1/2 the mix (about 41g) into the pan. It should be just enough to coat the bottom of the pan

Cover and cook 1-2min until the pancake is just set, gently flip the pancake and cook for another minute.

Remove from heat and if you'd like roll the pancake like a crepe (as pictured above)

Whip the remaining heavy cream and top the pancakes with it.

Serve and Enjoy, or freeze the pancakes (prior to adding the whipped cream) and defrost as needed
