Bacon Cheddar Waffles

These are hands down T's FAVORITE!!!! (at least for now)  He will eat them for breakfast, lunch, dinner and every snack in between; all on the same day!  I'm not joking, I think there was one day that he ate these ALL day!  

Luckily they are easy to make in bulk and freeze well.  I typically make a VERY large batch, and freeze.  When T asks for one, I pop it in the toaster and POOF a hot and crispy bacon cheddar waffle is ready in under 2 minutes. 

Bacon Cheddar Waffles:

Ratio: 3.5:1    Serving Size: 2 waffles (78g)    Makes: 5 servings

The What:

  • 100g Eggs

  • 82g Heavy Cream

  • 60g Smart Balance (melted)

  • 20g Bacon (cooked crisp)

  • 70g Macadamia Nuts 

  • 56g Cheddar Cheese

  • 4g Baking Powder

The How To:

  1. turn on waffle iron.  I use the Dash Mini Maker and LOVE it. 

  2. In a bowl add melted smart balance, heavy cream and eggs, using a whisk mix until well combined and set aside.

  3. Using a small food processor grind the macadamia nuts into a butter, and add to the bowl with the egg mixture.  

  4. Chop bacon (or add to food processor and pulse until coarsely chopped) add to the bowl with the egg mixture and macadamia nuts

  5. Add the remaining ingredients to the bowl and mix using a silicone spatula until well combined.

  6. Measure out desired portion (no more than 40 g if you're using the mini waffle maker I recommended above) and pour into waffle maker

  7. Cook for 4-5 min. or until crisp on the outside

  8. Serve and Enjoy. 

  9. Or freeze and store in an airtight container or ziplock until ready to eat and pop into toaster to re-heat.
